Cherry Cheesecake Bars

First things, first…my intention in sharing recipes here is not that I want to be a food blogger. I just really love food…and when I find something delicious, I want to share it with the world. Not that the world reads my blog, but someday, right? I also think that food, cooking, and the act of eating together is something that brings us all closer. It’s a beautiful thing!

I will be honest with you right now that I cannot wait to make this dessert again. The next time might be with peaches, or blueberries, or even apples…but it will be made again. Soon, very soon. Maybe even this weekend. This is one of those desserts that’s so easy…you’ll be able to memorize it and make it any old time you want!

The Mr. and I are blessed to get to do life with our very best couple friends and their kids. Pre-kids, we went out to eat together almost every Saturday. That tradition has waned a bit…schedules, money, and well…kids! Instead of giving up altogether, though, we get together as much as we can and sometimes it’s at one of our houses.

These dinners always look different, but one thing can always be counted on—dessert! I was supposed to make this one a couple of weeks back, but I wasn’t feeling it. Now I’m even more bummed…knowing how delicious it is…I could have had it twice by now!

I found the original recipe here; I edited the name a bit and made a few small variations—two by accident and one intentionally. My bad.

What you’ll need:

8”x8” greased baking dish

1, 8oz pkg. crescent rolls.

12 oz cream cheese, softened

¾ cup granulated sugar, divided

1 tsp. vanilla extract

1, 21 oz can cherry pie filling

¼ cup butter, melted

Step 1: Preheat oven to 350 degrees (F)

Step 2: Lay 4 of the crescent rolls on the bottom of greased 8”x8” pan (1/2 roll) – pressing the seams together

Step 3: Combine cream cheese and ½ cup sugar, beat well with electric mixer

Step 4: Add vanilla and mix

Step 5: Spread cream cheese mixture on top of crescent rolls in the pan

Step 6: Pour and spread pie filling over top of cream cheese mixture

Step 7: Top with remaining ½ of crescent rolls

Step 8: Pour melted butter on top of crescent rolls

Step 9: Sprinkle ¼ cup sugar over melted butter

Step 10: Bake 35-45 minutes

Total transparency right now…I literally messed up 2 of these steps when making the dessert and it still tasted amazing!!! Changes/mistakes I made: I used reduced fat crescent rolls, only used 8 oz of cream cheese, and I put all the sugar into the filling—instead of sprinkling part on top. And yet…so tasty! Now I can’t wait to make it again…and maybe get all the steps right. Ha!

Also, adding to the experience, I ended up dropping the entire thing on the floor, upside down at our friends’ brand-new house. So, I’m thankful for their understanding and, also for foil—bless, foil.

If you’re looking for something tasty and easy to make for dessert…cherry cheesecake bars for the win!
